Welcome to the Spirit Shop of Annapolis blog! Today, we’re diving into the fascinating realm of bitters—a small, yet transformative ingredient in the world of mixology.


What Are Bitters?

Bitters are highly concentrated flavor extracts, often made by infusing herbs, roots, fruits, and spices in alcohol. Making bitters involves a meticulous process of steeping botanical ingredients in a high-proof spirit, allowing the flavors to infuse over weeks or even months. The result is a potent, concentrated liquid that packs a punch of flavor. They add complexity and depth to cocktails, elevating them from ordinary to extraordinary with just a few drops.


A Brief History of Bitters

Bitters have a rich history, originally used for medicinal purposes in the 18th century. Apothecaries would concoct them to aid digestion and cure ailments. Over time, they found their way into cocktails, becoming a staple for mixologists around the globe.


Why and How to Use Bitters in Cocktails

Bitters serve as the "salt and pepper" of the cocktail world, adding balance and complexity to drinks. They can counterbalance sweetness, enhance aromatic notes, and provide a nuanced finish. To use them, simply add a few dashes to your cocktail—start with less and adjust to taste.

We’re excited to offer an array of artisanal bitters and here are a few of our favorites:

- Angostura Bitters: Versatile and aromatic, great for a classic Old Fashioned.

- Regan’s Orange Bitters: Bright and citrusy, ideal for a crisp Martini or to take that Old Fashioned to the next level.

- Fee Brothers Aztec Chocolate Bitters: Rich and chocolatey, a delightful addition to an Espresso Martini.


The Classic Old Fashioned

Here’s a timeless recipe to get you started with Angostura Bitters:

Ingredients:

- 2 oz bourbon or rye whiskey

- 2 dashes Angostura Bitters

- 1 sugar cube and a few dashes of water (can replace with simple syrup, we recommend Twisted Alchemy’s Demerara syrup or Rich Simple Syrup)

- Orange twist and cherry for garnish (suggest Luxardo Cherries or similar)

Instructions: 1. Place the sugar cube in a glass, add bitters and water, and muddle until the sugar is dissolved. 2. Fill the glass with ice or even better use a large circular or cubed piece of ice, pour in the whiskey, and stir well. 3. Garnish with an orange twist and a cherry. Enjoy!
